I needed to lose weight. A lot of weight. What I did not need was another scoop of protein powder pretending it was a chocolate milkshake.
I was taking GLP-1 medication, but I wasn’t tolerating it well. When I increased my dose to try to lose weight, I couldn’t eat. At all. And somehow, the weight was still coming off realllly slowly.
I started wondering how I would ever maintain my weight loss after the medication. I wanted to find meals I could eat, enjoy and keep making.
Protein seemed like a good place to start. Unfortunately, I hated protein powders. I wasn’t a fan of Greek yogurt, either. And cottage cheese? Absolutely not. I had opinions. Strong ones.
The salad that changed my mind
I started with a small amount of cottage cheese in a salad. Nothing dramatic. Just enough to see whether I could tolerate it.
And I could. It was creamy enough to replace the dressing, and it gave me another way to add protein to my meal. So I added a little more. Then a little more.
Apparently, cottage cheese had been waiting for me to stop being so damn stubborn.
Then I started playing with the flavors
I like sweet and tangy together, so I started mixing fruits and vegetables. A little cucumber. Some fruit. Chicken for protein. Cottage cheese to bring it all together.
That’s how my tropical bowls happened: chicken, cottage cheese, cucumber, mango and blueberries. A little salt on the cucumbers. Black pepper. Sometimes lime juice or apple cider vinegar for that tangy bite.
No protein powder. No complicated production. Just a bowl of food I actually wanted to eat.
Something I can keep making
I found a meal with plenty of protein, a creamy dressing built right in, and the sweet-and-tangy combination I kept looking for. I could change the fruit, adjust the seasonings and make it work with what I had.
And while I was figuring out meals I enjoyed, I was still losing weight. That mattered to me. So did finding something that felt practical enough to keep making.
I’ve made this one in my own kitchen. It has earned its place in the Salty Kitchen.
The food I swore I wouldn’t eat now has its own recipe card. I would like a moment to process this betrayal.
Try the Tropical Chicken Bowl, then make it your own with Tropical Lime, Tangy Ranch-ish or Sweet Heat.
